As a home dad (Domestic Engineer) of 2 small children, I have to say my least favourite task of the day is to plot what is for dinner.  I actually don't mind the cooking or running to the shop for an ingredient or two.

Its the planning of what to have that annoys me the most  mad

Have to factor in, what the little people have had recently ... maintain variety.  What will balance their diet.  What regular dishes we (I) are bored of.  And to a lesser extent, whats in the cupboard/fridge/freezer.

So whats your specialty ?  Ideas are always needed on this subject 

The simpler the better, but by all means go crazy with detail  smiley

Ok, this is a pretty simple dish, and may be beneath some of you folks with discerning spuds and deep pockets (due to punt winnings of course wink )

But I really love it.  So easy,  I'll call it ...

Big Red Rissoles

Make your best rissoles.  I'd suggest almost all the sauces in your cupboard, onions, mustard, breadcrumbs and an egg or two with the mince.
Boil some rice.  Rinse.  Put aside
Cook your rissoles in a fry pan.
Throw the rice on top.
Pour a can of Tomato Soup over it all with heat down to medium.  Turn the soup through for a few mins, don't break up the rissoles.
Serve with steamed greens.

Has some great flavour and is quick and simple.  My son who could well be the pickiest child in the world loves it.   Clearly he doesn't eat the greens, but am working on it.

Very hard to get vegies into picky youngsters these days I'm afraid.

My wife does a nice dish - Chicken Korma, using a tin of Patak's Korma, and manages to throw in some broccoli and cauli - served with rice. Kids don't mind that.

Stir fry's are also very popular, and another way to sneak in vegies.

I like brown rice but have been outvoted on this for the less healthy white rice.

And of course there is the requisite storytelling of how "when we were kids", how we used to have to eat vegetables that had the begeezus boiled out of them and were tasteless. Not to mention the f. string beans. Meat was usually some piece of steak or a chop, and if you were lucky it was fried and not cooked in that hideous invention, the vertical griller!

We love lean lamb mince rissoles / patties here, I normally make to my wife's past instructions. Onions, parsley, mint, sun dried tomatoes, egg, bread crumbs and what ever else. Beaautifullll.  beer

Some lemon peppered drummer grilled,
some 2 minute noodles with fried onions and broccoli shoots, and corn kernals folded in at the last moment,
some sauteed mushrooms in a cream/garlic/white wine sauce
some snow peas

All done in under 5 prep and 5 minutes cooking if you are organised.

Have to vouch for the slow cooker - chop up whatever meat and veges you want (maybe except broccoli, which is a questionable starter in slow cookers), throw it all in then add a cup of stock, some curry paste, coconut milk, garlic, ginger and chilli.

Do all this in the morning, leave the cooker on low, go out and enjoy your day and then ten hours later just boil up some rice and dinner is served.

A quick and easy meal that my kids (4 & 6) love and get involved with is chicken wraps.

Chopped up chicken breast -  a quick marinate in satay sauce (or even bbq sauce) then grill or fry in pan.
Other Toppings - grated cheese, tomato, cucumber, lettuce, capsicum etc

Heat burrito tortilla's in a fry pan or oven.

Kids spread there own sauce on burrito and select there chicken and toppings.  I roll and cut in half.

good fun as well.

When my grandkids are having a stayover at our place I serve them up a freshly peeled carrot stick.

As a treat I cover the end of it with peanut butter.

I can't believe Mrs Mono reckons I'm tight...a trait I must have inherited from my dad. smiley

is drummer a fish ? I think it must be.  The kids are a bit crazy on these whiting fillets I have been buying of late, but could use the rest of the idea I think.  $30 a kilo ... I actually don't eat any seafood at all, but my kids haven't figured that out yet, and I do cook it

also, don't mind the idea of lamb rissoles ... might have to try that ... haven't done the fresh mint or basil in them either     Thumb Up  

I don't know what a bushmans breakfast is either what

we do the mexican thing also Vintage, love it ... only problem is that unless its fruit or a vegemite sandwich my son (2.5) won't touch it

How old are the kids Piggy?

Mine are 1 & 3

The 3 year old eats like a sparrow while the 1 year old takes after dad and loves a feed shy

One of my quick and easy meals that I could get Miss 3 to eat is eggy pasta tongue

Boil some pasta in chicken stock, once cooked, drain and return to the pot, crack in an egg as well as grated cheese, mix well so the egg cooks. Easy.

We have graduated to putting in broccoli now as well.

Hi Gin smiley love your work

I have a daughter Charli, who is 5.5 and is a tremendous eater ... eats everything you put in front of her as long as there is something for "sweets" at the end of it ... sweets might only be fruit quite often

I have a son Archer, who is 2.5 and he is a fair bugger.  Fruit and vegemite sandwiches is about all he eats.  One trick I have figured out, is that he will drink those V8 vegetable juice poppers and thinks its a normal "popper".  So I load him up with one of those just about every day.

Imagine a little kid saying ... popper ! popper !  bop bop

Pigskin,

Drummer are possibly the best eating fish in NSW waters and are not commercially availbale to the best of my knowledge. Experienced rock fisherman catch them mostly. Their flesh is the most brilliant white you will ever see, once lightly grilled, and the lemon peper makes a brilliant contrast.

The sauteed mushrooms in a garlic cream sauce ( white wine optional and only a little if used anyway ) forms the base of veal scalopini served in some restaurants sans tomatoe of course. Both of these things lose their taste if cooked too long.

Fours
brocooli stems/shoots once diced are easily cooked and mixed with other vegetable to fool the kids - good for stir fry crunch

Another that's easy.

Cheats risotto

Fry up some garlic, bacon (2 rashers) and mushroom (150g).

Throw into oven dish with arborio rice (3/4 cup) & 2 1/4 cups of chicken stock then stir.

Cover with foil for 40 mins in the oven (180c) once out stir through baby spinach leaves, grated parmesan and 20g of butter. Salt and pepper to taste.
